White chocolate crackles

These are the best white chocolate crackles....they actually crackle and pop and explode with flavour!


What's the secret? Popping candy and freeze dried fruits. And Vahlrona white chocolate which just melts in your mouth.
(PS. I got the interesting ingredients from Exquisite Flavours: a great little find of a store that looks like a warehouse, because it wholesales, but it also sells direct to the public, It has interesting gourmet-y foods and is in Federal St North Hobart).

But to crackle up, use:
100g white chocolate (melt for 2 mins in microwave on 50% power)
2 teaspoons freeze dried fruit powder, mixed in
1/3 cup freeze dried fruit pieces, stirred through
3/4 cup rice bubbles, dry toasted in a frying pan, and stirred through. and lastly,
1 and 1/4 tablespoons popping candy
Spoon into mini patty cases and sprinkle with a bit of edible glitter if you want some extra sparkle!

Then, the other day for a sweet offering for friends I quickly whipped up a batch with the white chocolate, toasted rice bubbles, popping candy, some rose- flavoured turkish delight and freeze dried pomegranate seeds. It was a white chocolate crackle, with middle eastern yum...
You can't help but have fun with popping candy!
